In this video I show you how to make a simple Thai yellow curry with store bought paste. You can make it with whatever you like, be it thinly sliced beef, chicken or pork, your favorite veggies or even fish.
The recipe below is just a basic guide.
Serves 4
4 heaped tblsp Thai yellow curry paste
2 sticks lemongrass (optional)
400g thin strips of any meat OR
600g butternut or other veggie
300g green beans or other veggie
handful of kale, chard or bok choi
8 Kaffir lime leaves
1 can coconut milk + 1 can water or chicken stock
1 tsp palm sugar
Juice of one lime
1 to 2 tblsp fish sauce
Rice, coriander leaves and fried shallots to serve
