How can you tell if a steak is done? Should you use a touch test or an instant read thermometer?

In this video we’ll walk you through two of the most popular ways to test steak doneness: 1) touch test (also known as the finger test) and 2) using an instant read meat thermometer.


How to tell if steak is done using the touch test / finger test:

Using the touch test for steak doneness is very easy since it only requires your hand, and no additional equipment. However, it’s very subjective and requires a lot of practice.

If you hold out the palm of your hand and poke the base of your hand by the base of the thumb, the flesh feels very soft. That’s how raw meat feels.

Next, make an OK sign with your hand by touching your forefinger and thumb together. If you feel the same part of your hand, you’ll notice it’s firmer. That’s how meat feels when it’s rare.

As you move to your other fingers, the pad of your hand will get firmer as you move towards your pinky.

When you touch your middle finger to the tip of your thumb, the base of your hand feels similar to how a medium rare steak feels.

A medium-well steak is like touching the tip of your ring finger to your thumb.

Last but not least, touch your pinky to your thumb. That’s the equivalent of a well-done steak.

Testing for Steak Doneness with a digital meat thermometer

When checking for doneness with a thermometer, remember the temperature of cooked beef will continue to rise as it rests. Remove beef from heat when the thermometer reads about 5-10°F lower than the desired doneness. The USDA recommends steaks and roasts be cooked to 145°F and then rest for at least 3 minutes. Ground beef should be cooked to a minimum 160°F.
